It's not too important. I Am sure it will taste delicious anyway you do it. Sometimes I don't bother, and I just pour it into small glasses straight from the jar. But some of my sloe gin is several years old. I always make a good amount.<br /><br />You can also make damson gin. Though I guess a sieve will be sufficient. Yes, they freeze very well and frozen fruit makes excellent sloe gin!<br /><br />Do you eat Christollen instead of a pudding? I usually make my own stollen and also some small gingerbread biscuits with icing sugar on.<br /><br />Your English is excellent! Then I read about it in a Downton Abbey book my brother gave me and decided I just had to make it. I heard about sloes and thanks to my colleague I also got to know where to find them (she was so sweet to draw me a map and telling me they're bigger than blueberries, I really pictured them smaller plus I was surprised to find out they had a pit, really more like a small plum, isn't it?). Anyway I picked so many that I made the first batch after your recipe, then put the others in the freezer (that's what the DA book said anyway) waited for my 4 l jar to arrive and put the rest in there. I pricked them as well, but it wasn't really necessary. Did you ever put yours into a freezer? So now I'm shaking them every (other) day (the DA book says once a week) and I'm waiting. However what exactly do you mean when you say "strain off" (sorry, english isn't my native tongue). And when every one says it only gets better with time, does that mean when the sloes are out or wouldn't it be better to keep them in for a year? Sorry for all the questions.
